Dragon Fruit Salad

We grow our own dragon fruit on the ranch. We patiently wait for the plant to produce this delicious fruit. My favorite is the reddish-pink color. I love the sweet taste, along with the red onion and yellow bell pepper. A raspberry vinegar salad dressing goes well all together on a bed of lettuce. I think this photo goes well for  Mellow Yellow Monday and Blue Monday. Are you familiar with the fruit?

The dragon fruit is grown throughout Asia and Mexico. I was fortunate to get a starter plant from a friend. She tells me that many avocado trees have been known to have the dragon fruit plant growing inside, climbing upwards to reach fro the light. As you can see below, there's a variety of color inside, as well as taste. Mine sort of tastes like a Kiwi but naturally sweeter. It's funny how the outward shell of some fruits can look so rough in appearance but inside, you've hit the sweet spot!

Santa Fe Crossing

Town Mural

 We have some wonderful, talented artists in our town. I am so fortunate to live in a community where their artwork is displayed in local restaurants, our newly built library, the town square and professional collections found in an art center.

Farmer's Market Sign
Do you have a local farmer's market in your town? Ours is every Friday in the town square. Other nearby towns, about a 15 minute drive from us, have their market days on Saturday. I love the country living lifestyle!

Book Sharing Monday: Smiling Like Sunshine

Awhile back, I shared a post about Magic Train Ride. The above photo reminds me of a journey I took as a little girl on the train to go see my grandma, who lived way far away.

Blue Monday: The Blue Parrot


We went to the Safari Park in San Diego on Saturday for an early Mother's Day outing and surprisingly, we pretty much had the whole park to ourselves. The San Diego Zoo Safari Park, formerly known as the San Diego Wild Animal Park, is a zoo in the San Pasqual Valley area of San Diego, California, near Escondido. There's about 3500 animals or so that inhabit the 1800 acre park. I love the African feel of the place. This blue parrot is one of my favorite birds at the park but there are many native bird species; the California Condor is the largest North American land bird and was once on the brink of extinction. The San Diego Zoo Safari Park started a captive breeding program and started reintroducing the California Condor to the wild in 1991.


I chose this beautiful parrot that I captured with my Nikon D200 for two memes that I enjoy participating in, Blue Monday and Mellow Yellow Monday.

For Book Sharing Monday:The Parrot Tico Tango


Last week I brought Barefoot Books to Santa Fe Montessori School for their Book Fair. What a wonderful turn out and the community was so supportive, with great sales. One popular paperback book that the children loved, The Parrot Tico Tango, lives in the rainforest with his animal friends. Tico Tango wants all of the fruit in the forest, even though it belongs to other animals. Will he learn what s right and wrong? The rhyming text teaches colors and animals, as well as an important lesson about sharing.

There's so many colorful fruits in the book and an important lesson to learn about not taking other people's stuff. Great for ages 4-8. To view more images of the book, visit The Parrot Tico Tango
